TOMATOES ARE RICH IN VIT K , VIT C, POTASSIUM, FOLATE AND A MAJOR SOURCE OF THE ANTIOXIDANT LYCOPENE.THEY ARE RED WHEN MATURED BUT COME IN OTHER COLORS SUCH AS YELLOW, ORANGE AND GREEN.LOCALLY GROWN TOMATOES ARE YOUR BEST BET FOR HEALTH AND TASTE .ALWAYS COOK THE VEGETABLES AS EATING THEM RAW IS GOOD BUT EATEN LITTLE COOKED ARE ALWAYS MORE BENEFICIAL.

INGREDIENTS:
- TOMATOES-6 BIG ( THINLY SLICED)
- GINGER AND GARLIC PASTE/ ADRAK LASSAN -2 TSP
- RED CHILLI POWDER-2 TSP
- TURMERIC/HALDI-1 TSP
- WHOLE CUMIN SEEDS/ZEERA- 1TSP
- MUSTARD SEEDS/RAI-1/2 TSP
- FRESH CURRY LEAVES- FEW
- OIL - 3 TBSP
- SALT TO TASTE
- IN A DEEP PAN PUT OIL WARM IT UP , ADD CUMIN SEEDS, MUSTARD SEEDS AND CURRY LEAVES.SAUTÉ FOR A MINUTE.
- ADD THE GINGER/GARLIC PASTE AND THE SPICES SAUTÉ AGAIN FOR A MINUTE.
- ADD THE SLICED TOMATOES AND MIX WELL
- COVER AND COOK STIRRING IN BETWEEN, AVOID STICKING OR BURNING AT THE BOTTOM.
- COOK TILL DRY AND OIL LEAVES THE SIDES.
- IT IS A GREAT SIDE DISH.
- SERVE HOT WITH RICE.
