SUBZ METHI ALOO- SIMPLE VEGGIE WITH VERSATILE POTATO AND FENUGREEK!!!

 


FENUGREEK - ALSO CALLED METHI IN HINDI,ITS SEEDS AND LEAVES ARE USED COMMONLY IN DISHES IN THE INDIAN SUB-CONTINENT.ITS FRESH AND DRIED SEEDS,LEAVES,TWIGS AND ROOTS  ARE USED AS A HERB AND FLAVOURING AGENT .

ITS WIDELY USED IN ALTERNATIVE MEDICINE,ITS A STRONG ANTI OXIDANT ,IT IS HIGH IN SOLUBLE FIBRE WHICH IS GREAT IN MAINTAINING SUGAR LEVELS AND ALSO FOR INCREASING MILK PRODUCTION IN LACTATING MOTHERS.

POTATO- THIS UNDERGROUND STARCHY TUBERS ARE NATIVE TO THE AMERICAS,THIS IS A VERY VERSATILE VEGETABLE LIKED BY ONE AND ALL ,YOU CAN ADD TO ANY DISH AND IT BECOMES A DELICIOUS TREAT.

POTATOES ARE GOOD IN FIBRE,  PHYTOCHEMICALS, MINERALS AND VITAMIN CONTENT,ITS HIGH IN POTASSIUM AS WELL AS VITAMIN B6.

ITS A VERY ECO FRIENDLY CROP AND REQUIRES MINIMUM FERTILISERS AND CHEMICALS.

IT CAN EASILY BE CALLED THE WORLDS FAVOURITE ROOT VEGETABLE.

THIS IS A VERY SIMPLE AND EASY RECIPE.

RECIPE CARD:

PREPARATION TIME:5-10 MINS

COOKING TIME: 10-15 MINS

SERVES :4-5

INNGREDIENTS:

  • FENUGREEK LEAVES/METHI-3 BIG BUNCHES(CHOPPED FINELY)
  • POTATO /ALOO-2 BIG( CUT IN SMALL CHUNKS)
  • ONION/PIYAZ-1BIG(CHOPPED OR SLICED)
  • GREEN CHILLIES/HARI MIRCH-4-5 NO
  • CUMIN SEEDS/ZEERA -1/2TSP
  • GARLIC /LAHSAN-5-6 (CHOPPED)
  • TURMERIC POWDER/HALDI-1/2 TSP
  • CORRIANDER LEAVES/DHANYA-2TBSP
  • OIL-2 TBSP

METHOD:

  • WASH THE METHI LEAVES THOROUGHLY, SPECIAL CARE MUST BE TAKEN FOR WASHING LEAFY VEGETABLES AS THERES LOT OF MUD IN THEM ,I IMMERSE THEM IN WATER AND CHANGE THE WATER TWO TO THREE TIMES.
  • CHOP THEM.
  • IN A DEEP PAN PUT CUMIN SEEDS, ONIONS,GARLIC AND GREEN CHILLIES AND SAUTÉ FOR 3-4 MINUTES.
  • ADD THE METHI LEAVES , TURMERIC SALT AND COOK FOR ANOTHER 3-4.
  • ADD THE POTATOES AND CORRIANDER LEAVES. COVER AND COOK TILL POTATOES ARE COOKED.
  • SERVE WITH ROTIS,RICE.
